To create a 'dark choc' croissant , Mr Sideris uses charcoal in the dough, and adds the dairy ingredients with crumble later on in the process. There is also a 'sushi' flavoured croissant with charcoal , black sesame, pickled ginger, smoked salmon , wasabi , nori and yuzu.

Two Australian-bred entrepreneurs are bringing back the croissant to the shores of Sydney - but they're doing it with a twist. FEMAIL takes a look.

With everyone turning towards 'clean treats' and 'nourish bowls' for mealtimes these days, the humble sausage roll, meat pie or croissant have fallen by the wayside.

In an effort to bring it back, Bo Hinzack and James Sideris have opened a quirky hipster cafe called Rollers, located in the Sydney beach side suburb of Manly, to entice patrons to treat themselves.

But the things on offer are a far-cry from the chocolate-covered or meat-laden delicacies you might come to expect from a bakehouse.

If you're after something a little bit more traditional - although not by much - you can opt for pistachio and blackberry, banana and cinnamon, maple bacon with custard and even a Vegemite variety.

There are traditional pies and sausage rolls for sale if you're feeling less adventurous.

Prices for each of the eccentric dishes aren't available online, although you can view the menu before you head in store.

Rollers Bakehouse is two years in the making, after Mr Sideris (who previously ran Butter Boy Bake and wholesaled to Mr Hinzack's cafe Penny Royal) decided to build a store to house his creations.

The pair wanted to share their love of good quality coffee with a handful of tasty snacks to boot.

'The idea is to have some fun with the croissant [and] just be adventurous with what we can achieve so when you bite into it it's like, "Holy sh--, that's different",' Mr Sideris told Broadsheet. 

There are two pink-tiled tables to sit at in the beachside cafe or you can watch Mr Sideris make his croissants from the street - with a glass panel separating his kitchen from the restaurant.
